RAW HEALTHY CARAMEL SLICE

Dark chocolate creates an indulgent, comforting feeling that lifts our spirit when we are down & enhances our level of happiness when things are going well. Eating it causes the production of endorphins, chemicals in the brain that evoke feelings of comfort & pleasure. 

Be mindful of the way certain foods make you feel. Listen to your body. For me eating healthy has a huge connection on my mental health & how I feel each day.

Here is a recipe to one of my favourite raw treats. I promise it is absolutely divine.

🍫 RAW CARAMEL SLICE 🍫

INGREDIENTS BASE:

2 cups walnuts 

14 medjool dates pitted pitted

1/3 cups cocoa powder

1 tsp vanilla extract 

Pinch of salt

(Optional) Chaga mushroom extract powder sachet (I use @vimergy)

 

MIDDLE

15 medjool dates pitted

2 tbsp natural peanut butter (I like to use crunchy for a little extra texture).

1 tbsp coconut oil melted 

1 tsp vanilla extract

1/4 cup rice malt syrup 

1/4 cup boiling water

 

TOPPING

2 blocks dark chocolate ( I use 70% @lindt )

Pinch of salt

 

HOW TO:

Place all the ingredients for the base in a food processor on high speed for approximately 1 minute until the mixture is a sticky crumble. Press into your 20x20cm tray.

 

Place all the ingredients for the middle layer in the food processor and process till smooth. Poor the mixture over your base and smooth with a spoon. Place your slice in the freezer for 1hour.

 

Melt chocolate over the stove top and poor a thin layer over your slice. Sprinkle a pinch of salt over your slice and pop into the freezer till it sets.

I promise you will make this more than once 😍.

 

Use a hot knife to cut. Store in an air tight container in the freezer.
